Make-ahead Mashed Potatoes

SAUCE

9          -           -                       large baking potatoes, peeled and cut into chunks

12        -           oz                    cream cheese (at room temperature)

-           1/2       cup                  butter

-           1/2       cup                  sour cream

-           -           pinch               nutmeg

-           1/4       tsp                   white pepper

-           1/2       tsp                   salt

 

    • Cover potatoes with wather and bring to a boil.
    • Reduce to a medium heat and simmer until tender.
    • Drain and place in a mixing bowl.
    • Beat potatoes with mixer until fluffy.
    • Cut cream cheese into small pieces.
    • Beat butter and cream cheese into potatoes.
    • Beat in sour cream and seasonings.
    • Scrape into buttered cassarole.
    • Cover with plastic wrap and refrigerate.
    • Bring to room temperature before baking.
    • Reheat at 300 degrees uncovered about 20 minutes.
