Make-ahead Mashed Potatoes

SAUCE
9 - - large baking potatoes, peeled and cut into chunks
12 - oz cream cheese (at room temperature)
- 1/2 cup butter
- 1/2 cup sour cream
- - pinch nutmeg
- 1/4 tsp white pepper
- 1/2 tsp salt
- Cover potatoes with wather and bring to a boil.
- Reduce to a medium heat and simmer until tender.
- Drain and place in a mixing bowl.
- Beat potatoes with mixer until fluffy.
- Cut cream cheese into small pieces.
- Beat butter and cream cheese into potatoes.
- Beat in sour cream and seasonings.
- Scrape into buttered cassarole.
- Cover with plastic wrap and refrigerate.
- Bring to room temperature before baking.
- Reheat at 300 degrees uncovered about 20 minutes.

Time: 20 Minutes
